Just about any bread you make with the Good Tastings Bread mix is going to be delicious, even if you just make the bread plain with beer or club soda (or a sweet bread with carbonated juice, etc.) and use a dipping oil with it. But I tried something the other day that was very good and easy: I mixed the bread mix with club soda, added 3 tbsp. of the Tomato & Basil snack & dip seasoning and spread it onto a round baking stone. I topped it with a little dried parsley and tarragon, then ground some sea salt on top and it made a fabulous focaccia to have with our Italian-themed dinner that night. The next day, I cut a wedge of the bread and put a slice of provolone on top then placed it in the toaster oven until the cheese got bubbly. It was a great "pizza!"


Bread with Rosemary and Sea Salt

 

Ingredients

1 package Good Tastings Bread Mix
1 12-oz/355-mL can lemon-flavored sparkling water
3 tbsp/45 mL Rosemary
3 tbsp/45 mL Parsley
1 tbsp/15 mL coarsely-ground Sea Salt
1 tbsp/15 mL melted butter
 

Cooking Directions

Combine bread mix with sparkling water. Pour half of batter in loaf pan. Combine rosemary and parsley; sprinkle 4 tbsp/60 mL over the batter. Pour in remaining batter and spread evenly. Sprinkle remaining herbs on top, followed by sea salt. Drizzle with butter and bake at 325°F/170°C for 50 minutes to 1 hour.

Chai Loaf

Ingredients

Bread
1 cup/250 mL brewed Chai
¾ cup/180 mL raisins
¾ cup/180 mL craisins (dried sweetened cranberries)
1 cup/250 mL sugar
1 egg
¼ cup/60 mL Original Grapeseed Oil
2 cups/500 mL flour
1 tsp/5 mL Baking Powder
¼ tsp/1.2 mL baking soda
½ tsp/2.5 mL salt
Cooking Spray

Honey-Lemon Butter
½ cup/125 mL softened butter
2 tsp/10 mL honey
½ tsp/2.5 mL Lemon Peel

Cooking Directions

Bread
The night before: put brewed Chai in a large bowl along with dried fruits and sugar. Let stand covered overnight. The next morning: Beat egg and grapeseed oil together and stir into Chai/fruit mixture. Combine remaining ingredients. Add to fruit batter; stir until blended. Spoon into a loaf pan coated with Watkins Cooking Spray. Bake at 350ºF/180ºC for 50 to 60 minutes.

Honey-Lemon Butter
Whip together ingredients for Honey-Lemon butter.

When loaf is done, turn out, slice and serve hot with Honey-Lemon Butter

Cinnamon Swirl Loaf

 

Ingredients

1 cup/250 mL sour cream
1 tsp/5 mL baking soda
½ tsp/2.5 mL salt
½ cup/125 mL (1 stick) butter
1 cup/250 mL sugar
2 eggs
1 tsp/5 mL Original Double-Strength Vanilla (11 oz)
1 ¾ cup/325 mL flour
1 tsp/5 mL Baking Powder

Filling
½ cup/125 mL brown sugar
1 ½ tsp/7.5 mL Cinnamon (6 oz)

Cooking Directions

Combine sour cream and baking soda in small bowl; allow to work while mixing rest of loaf. Cream together butter and sugar. Add eggs and vanilla. Combine dry ingredients and mix alternately with sour cream into batter mixture. In a separate bowl, mix cinnamon and brown sugar filling. In a greased loaf pan, alternate a third of the batter mixture with a third of the filling; repeat. Swirl with knife. Bake at 350ºF/ 180ºC for 1 to 1 ½ hours.
